My Newest Mom Life Hack: Daily Harvest

I recently gave Daily Harvest a try and I was NOT disappointed. As a busy women and mom, I love anything that makes my life easier, and these my friend should be a staple for anyone looking for just that, especially when it comes to meal time.

They make it almost too easy, if you can say that.  You log into your account, select how many you would like per week or month then make your actual selections (cauliflower rice and pesto is my current favorite).

They arrive via FedEx on the date selected, packaged with dry ice (my 8th grade self would LOVE this as I did my science fair project on dry Ice).  You place them in the freezer until you’re ready to eat then it’s simply microwave for 4 minutes or use the stove top, eat and ENJOY.

I won’t lie.  My first experience I was expecting it to be what you would expect from your “typical” freezer meal and THEY ARE SO MUCH BETTER!  If you didn’t know any better, you would think it was home made right there in your kitchen.

You can get smoothies, harvest bowls, soups, lattes and more!

I have been choosing harvest bowls as I’m not a huge soup person and have a set smoothie recipe that works for me at the moment.  The best part is, that if you don’t eat them in a certain time frame, they are still good as they stay in the freezer.  What?!?!?  Mind blown.

I don’t know how they do it but the flavors go beyond what you would expect from frozen goods and any meal delivery service you can find (trust me, I’ve tried quite a few!)

80 Day Obsession – Fight For Me

For the last year, my motivation has been on a roller-coaster ride.  I allowed external “things” to get in my way, to control my emotions and get in my head, clouding my goals.

We moved house, which I actually wanted.  I have been working through postpartum anxiety.  I have nerve issues in my back that I let get the best of me.

All of these took its toll on me, throwing me a curve-ball that I didn’t quite know how to deal with.  Finally, in December, I had enough and was ready to push myself through, gaining control of myself back and getting back to working on a stronger, healthier me not just for myself but for my family.  My son is my everything and I didn’t want him to watch me give in, to say screw-it but to fight for me.

In January, my company was launching a brand new program that I just knew was exactly what I needed and at just the right time.  But, I had no idea just what that effect was going to be and just how life-changing it was for me.

“It’s only over if you quit”

What I’ve learned in the last 44 DAYS:

  • I have the ability to let the scale determine my CONFIDENCE, my WORTH, ME
  • The scale is only a number.  You hear that so often but I used to be someone who got on the scale every morning and let that number determine my day. How happy I was or sad or defeated I felt, all based on that ONE NUMBER.
  • The problem is that it is just a number.  YOU ARE SO MUCH MORE THAN THAT.
  • I am stronger than I think. At times, I doubted myself but when I chose the heavier weights I felt empowered by MY OWN STRENGTH
  • This is MY JOURNEY, stop comparing yourself to anyone else, that can also led to you feeling defeated and not being proud of you own accomplishments
  • It is more MENTAL than you think.  You can do anything you set your mind to.
  • It is OKAY TO MODIFY.  Previously, I would allow my back pain to be an EXCUSE for me to not workout.  Now I know that it is simply a matter of modifying the moves that I need to

Since starting on my NEW JOURNEY 44 DAYS AGO, I have only allowed myself to get on the scale once a week for my weekly check-in but with it, I also check my measurements and take my photos.  This has helped me to see a WHOLE VERSION of the work I am putting in.

These last 44 DAYS have also shown me that this is truly a journey, it never ends.  I will never give up on myself or my health.  Once you feel like you’ve “completed” a program, you start to let things slip which simply creates a downward spiral to going back to you OLD WAYS.  Think of this as the beginning of your journey.

Take time to truly work on your self.  There is so much power in taking some time for yourself.  It could be in taking a bath or getting a massage or sitting outside with a good book.  It has more effect on your mind, body and soul than you may think.

During these first 44 DAYS, I was away from home for 9 of them and I still worked out and did my best to stay on track with my nutrition without feeling deprived.  I set myself up as best as I could for SUCCESS while on vacation.

Don’t ever give up. Focus on those non-scale victories and remember this is a JOURNEY.

So far I’m down 6lbs, 10 inches and I’m not stopping

Thursday Taste: Easy Egg Cups

This is real life.

I’m not a chef. I’m not trained. I’ve actually always had this thought that cooking was meant to be hard, take a long time to make anything worthwhile and always steered towards the “easy” way.

Truth is. I am simply a mom, trying to make a healthy lifestyle change for myself and my family.

Truth is. Most of the meals I make are NOT “Instagram worthy”. But you know what. That is real life. That is mom life.

Truth is. Most of the time I suck the first time I make something. But I keep at it. I keep trying.

And today I learned that I will not use baking cups when making egg cups again . . . 

Ingredients:

  • Nonstick spray or reusable silicone baking cups
  • 1/2 cup Almond Milk
  • 2 cups Egg Whites
  • 1 cup chopped peppers and onions
  • Dash of himalayan salt and ground pepper, if desired

 

Instructions:

1. Preheat oven to 350° F.

2. Line a twelve-cup muffin tin with fun silicone baking cups or spray with nonstick cooking spray. Set aside.

3. Combine almond milk and egg whites in a medium bowl. Season with salt and pepper, if desired; whisk to blend. Set aside.

4. Evenly divide chopped peppers and onion between prepared muffin cups.

5. Evenly pour egg white mixture over onions and peppers.

6. Bake for 20 minutes, or until a toothpick inserted into the center of egg cups comes out clean, and eggs are set.

7. Enjoy!

SO FRESH & SO CLEAN (EATING TIPS)

The goal is to limit your processed food intake and eat natural food as much as humanly possible.  It’s about eating more of the best, healthiest options in each of the food groups.  We understand clean eating is not easy but you can take steps to get your daily food intake to a better, healthier place.

  • Limiting Processed Foods

Processed food are high in sodium, sugar and fat.  A couple key things to note here:  Look for foods that have 5 or less ingredients on the package and if you can’t say the names of the ingredients then stay away.

  • Take Out Sugar

Most people have far too much sugar in their diet.  What you want to do is limit the foods with added sugars in them like sweets and soda.  You also want to look out for foods that have added sugar to them.

  • Limit Salt Intake

Going on from sugar is your salt intake.  Like sugar, you want to make sure you are eating foods that have not added salt to them.  You can also help lower your salt intake by limiting your processed food.  You could add herbs and spices in its place or no-salt items like Mrs. Dash.

  • Eat Your Veggies

Vegetables tend to be where many people lack in their diet.  It is super important to make sure you eat enough veggies daily as they are jam-packed with nutrients that your body needs – like potassium, dietary fiber, vitamins A and C.

Low potassium is associated with high blood pressure, heart disease, digestive disorders and even stroke.  Potassium can be found in: Banana, sweet potato, beans, winter squash, prunes and yogurt.

  • Eat Fruits

Just like vegetables, fruits are packed with loads of nutrients that your body craves everyday, like potassium and Vitamin C.  When you can choose whole, fresh fruit over dried, canned or fruit juices.  If you need to chose fruits that are canned in their own juices with no sugar added.

  • No Alcohol

What?!  Yes, it’s true. Alcohol is in fact not “clean”.  It’s all sorts of fermented, sugary goodness.  So with that in mind, you would want to try to stay away from alcohol as much as possible.

  • Grocery Store Tips
    • Make a list before you go and stick to it!
    • Shop the perimeter and stick to the outer walls! That’s where they put all the fresh, natural, foods – fruits, veggies, meats
    • Avoid the aisles – if you don’t need anything in an aisle, just skip it!
    • In the frozen food section, avoid anything that says “one step”, “heat and serve” or “ready to go” meals in a box
    • When buying canned food, look for low sodium versions, salmon and tuna packed in water, and no extra sugars!

My little man is not in school yet but that doesn’t mean I’m not always “on the go”. As a mom, there are playgroups and classes, family activities and “mom duties”.
