Thursday Taste: Easy Egg Cups

This is real life.

I’m not a chef. I’m not trained. I’ve actually always had this thought that cooking was meant to be hard, take a long time to make anything worthwhile and always steered towards the “easy” way.

Truth is. I am simply a mom, trying to make a healthy lifestyle change for myself and my family.

Truth is. Most of the meals I make are NOT “Instagram worthy”. But you know what. That is real life. That is mom life.

Truth is. Most of the time I suck the first time I make something. But I keep at it. I keep trying.

And today I learned that I will not use baking cups when making egg cups again . . .

Ingredients:

  • Nonstick spray or reusable silicone baking cups
  • 1/2 cup Almond Milk
  • 2 cups Egg Whites
  • 1 cup chopped peppers and onions
  • Dash of himalayan salt and ground pepper, if desired

Instructions:

1. Preheat oven to 350° F.

2. Line a twelve-cup muffin tin with fun silicone baking cups or spray with nonstick cooking spray. Set aside.

3. Combine almond milk and egg whites in a medium bowl. Season with salt and pepper, if desired; whisk to blend. Set aside.

4. Evenly divide chopped peppers and onion between prepared muffin cups.

5. Evenly pour egg white mixture over onions and peppers.

6. Bake for 20 minutes, or until a toothpick inserted into the center of egg cups comes out clean, and eggs are set.

7. Enjoy!

BREAK IT DOWN: The Ultimate Reset

I’m going to get REAL with you for a minute here.  I just conquered the Beachbody Ultimate Reset and I’m here to tell you all about it.  It’s a 21 day cleanse for your whole body broken into three weeklong segments.  Each week comes with its own set of challenges but believe me when I tell you that you still get to eat, it’s just under strict guidelines.  This is no juice cleanse.  It is not a quick fix.  It is about retraining your brain and your body with how you look at nutrition, how you process food.  This is about getting rid of bad habits that may be stumping your progress and hopefully creating new ones.

Each week you will cut more and more out of your diet.  Starting with refined foods and animal products then eventually grains and legumes, which will have you eating a diet of fruits and veggies for your final week.  I loved that it was a gradual process and not cutting everything out all at once.

Each day you will eat 3 meals and 1 snack (which is optional).  And yes you can still have your Shakeology, of the Vegan variety (of which there are now more options!!)
For me, doing this detox was about getting over a plateau that I had been struggling with ever since I stopped breastfeeding my son.  It was about stripping down my nutrition to figure out what is and what isn’t working well with my body.
There were two issues that came up for me while on the reset: First, NO WORKING OUT FOR 21 DAYS.  That was more of a struggle for me than I ever thought it would be. But when you spend the last year focusing on your health and fitness, my workouts had become more of an outlet for me and I didn’t fully realize that until this moment.  And second, I was forced to cook up three separate meals every night.  Yikes.  My son has quite a few allergies so he gets his own dinner, then my husband and finally my own dinner.  This got old for me real quick so lucky for me they also have what they call the “Reset In A Crunch” meal plan which became my saving grace.
Here is a sampling of my meals during my 21 Days:
I won’t lie to you.  I did have a cheat or 2 during my 21 days.  But I didn’t let it get me off track and I jumped right back on the plan ASAP.  It is also imperative that you hydrate, so lots and lots of water.  Aim for a gallon of water a day.

This program is hard but YOU WILL GET RESULTS!  Stick with it for 21 days and you will feel better, you will lose weight, you will cleanse your body of all that nasty stuff, you will have created better habits and broken yourself of bad habits.
My results were quite astounding: down exactly 10 pounds and over 4 inches in my waist and hips alone.  But now it’s about how I continue to keep moving forward and not ruin my results by going back to my old ways.

Beachbody Coaching – Could It Be For YOU?

Until you have a child, you have no idea how you will feel or what you would do.  When I first had Brodie and realized I would ALWAYS have to decide between him or my business, I knew what I needed to do for myself and my family was to close my business.  Was it easy? NO.  Was I upset?  YES.  I had worked hard on that business for over 3 years.  I had made so many friends.  I had inspired others to start businesses of their own.  Was I judged for this?  YES.  But until you become a Mama Bear yourself and decide what is best for YOU then have no idea what you will do.  Every family is different.

What I found has given me so much than I ever imagined!  I found a community of women who lift each other up daily, motivate each other to be better wives, better mothers, better friends, better co-workers.
What I get to do each and every day is not only be with my son ALL THE TIME but I also get to INSPIRE, MOTIVATE and BE THERE for others. I get to help them to become stronger (whatever that means for them), to dominate their health and fitness journey and go after what it is they want out of life.
And guess what??
I GET PAID TO DO THIS!!
AND YOU CAN TO!
I work the hours I want.  And wherever I want.  I am my own boss but I am also part of a team so you are never alone.  YOU alone decide how much or how little you want to work.
Looking for some spare spending money?
Looking for something to help get you more active?
Looking to make an impact?
Looking to make a serious income?
Looking for a career you can do while staying home with your kiddos?
Looking to get out of a job that doesn’t make you happy?
If any of these are YOU, join ME on August 24th for a FREE, NO OBLIGATION Sneak Peak into what exactly all this Coaching is all about.

SO FRESH & SO CLEAN (EATING TIPS)

The goal is to limit your processed food intake and eat natural food as much as humanly possible.  It’s about eating more of the best, healthiest options in each of the food groups.  We understand clean eating is not easy but you can take steps to get your daily food intake to a better, healthier place.

  • Limiting Processed Foods

Processed food are high in sodium, sugar and fat.  A couple key things to note here:  Look for foods that have 5 or less ingredients on the package and if you can’t say the names of the ingredients then stay away.

  • Take Out Sugar

Most people have far too much sugar in their diet.  What you want to do is limit the foods with added sugars in them like sweets and soda.  You also want to look out for foods that have added sugar to them.

  • Limit Salt Intake

Going on from sugar is your salt intake.  Like sugar, you want to make sure you are eating foods that have not added salt to them.  You can also help lower your salt intake by limiting your processed food.  You could add herbs and spices in its place or no-salt items like Mrs. Dash.

  • Eat Your Veggies

Vegetables tend to be where many people lack in their diet.  It is super important to make sure you eat enough veggies daily as they are jam-packed with nutrients that your body needs – like potassium, dietary fiber, vitamins A and C.

Low potassium is associated with high blood pressure, heart disease, digestive disorders and even stroke.  Potassium can be found in: Banana, sweet potato, beans, winter squash, prunes and yogurt.

  • Eat Fruits

Just like vegetables, fruits are packed with loads of nutrients that your body craves everyday, like potassium and Vitamin C.  When you can choose whole, fresh fruit over dried, canned or fruit juices.  If you need to chose fruits that are canned in their own juices with no sugar added.

  • No Alcohol

What?!  Yes, it’s true. Alcohol is in fact not “clean”.  It’s all sorts of fermented, sugary goodness.  So with that in mind, you would want to try to stay away from alcohol as much as possible.

  • Grocery Store Tips
    • Make a list before you go and stick to it!
    • Shop the perimeter and stick to the outer walls! That’s where they put all the fresh, natural, foods – fruits, veggies, meats
    • Avoid the aisles – if you don’t need anything in an aisle, just skip it!
    • In the frozen food section, avoid anything that says “one step”, “heat and serve” or “ready to go” meals in a box
    • When buying canned food, look for low sodium versions, salmon and tuna packed in water, and no extra sugars!

BACK TO SCHOOL SURVIVAL CHALLENGE

I don’t know about you but it’s hard to believe Summer is coming to an end. With the end of Summer comes back to school. My little man is not in school yet but that doesn’t mean I’m not always “on the go”. As a mom, there are playgroups and classes, family activities and “mom duties”. It can all catch you off guard and unprepared when dinner rolls around.

If you’re anything like me, whenever I have a schedule change it can totally shake me up and that includes my eating and workouts. I thrive on a schedule – knowing where and when things will happen so when that changes it can totally rock my world and that is when I would always lose my self-control. Eating would get out of control – drive-thru’s, fast food and frozen meals, parking myself on the couch and heading home early rather than getting my butt to the gym. But that has all changed for me. I know how to roll with the punches and make that work for me. So let me work for you!

I want to help get you set up, become prepared and get you a little “me time”!

Let me teach you –
• Meal planning made easy
• Simple, easy portion controlled nutrition
• No counting calories, no counting points
• Healthy swaps
• 30 min / day workouts
• Workouts you can do from ANYWHERE with wifi
• How to eat out and travel without ruining any progress you have made

The Lowdown – 21 Day Fix

It’s about to go down – your weight that is!  As I break down the 21 Day Fix nutrition plan for YOU.

I once saw a video of someone who said they disliked the fact that it was called “Fix” because that implied that something was broken but the fact is that 21 Day Fix is in fact fixing something that is broken – eating habits.  Right now more than one-third of US Adults are obese and almost one-fourth of adolescents.  Let’s be honest, that is not good.  But I’m not here to talk stats, I’m here to help YOU change your life.  And a big part of that is understanding how to eat healthy and get your nutrition in check.

What I love about the 21 Day Fix is that is simple, easy to follow, portion control.  You aren’t told you CAN’T eat certain food groups or that you have to count calories or points.  Basically, if it fits in it’s appropriate container, you can eat it!  Yeah!

Here are some basics for you:

  • When you order the 21 Day Fix, it comes with 7 color-coded containers:
    • Green Container (Vegetables): 1 1/4 cups
    • Purple Container (Fruits): 1 1/4 cups
    • Red Container (Protein): 3/4 cups
    • Yellow Container (Carbs): 1/2 cups
    • Blue Container (Healthy Fats and Nuts): 1/4 cups
    • Orange Container (Seeds and Dressings): 2 tbsp.
  • How do I know how many of each container I can have in a day?
    • Simple calculation that you are given, which is also included in your package
  • Don’t feel like you have to eat all your containers. If you aren’t hungry, then don’t eat for the sake of eating.
  • If you find you need more food, start by adding a Green Container first.
  • You will want to spread your containers out throughout the day – between 3 meals and 2 snacks, roughly 2-3 hours apart. This will help keep your metabolism going and burning throughout the day.

This plan is about teaching you to eat clean, healthy food.  It is not a diet but a way to a healthier life that will become a lifestyle for you.
